Truffle Black Tagliatelle

Ingredients

  • 360 g of fresh egg tagliatelle
  • 110 g of butter
  • 80-90 g of black truffle
  • Salt and pepper to taste
  • Grated Parmigiano Reggiano to taste

Instructions

  1. Fill a pot with water, add salt, and bring it to a boil
  2. Cook the pasta
  3. In a non-stick pan, melt the butter over low heat
  4. Rinse the black truffle under running water to remove any traces of soil
  5. Once the butter is melted, grate some of the black truffle to use on your tagliatelle
  6. Drain the pasta while it’s still al dente and transfer it to the pan with melted butter and grated truffle
  7. Toss the pasta, adding a bit of pasta cooking water
  8. Let the pasta meld until fully cooked
  9. Add a sprinkle of grated Parmigiano Reggiano
  10. Plate the tagliatelle and grate a generous amount of black truffle on top. Enjoy your meal!

If you can find white truffle, don’t cook it; instead, add it to the already cooked pasta. White truffle should not be washed but cleaned with a soft bristle brush.

Black Truffle or White Truffle?

There are two types of truffles: the more common black truffle and the rare white truffle from Alba.

Black truffle has more pleasant aromas compared to white truffle.

White truffle has a bold, intense flavor with a stronger palate presence.

Black truffle is available year-round, while white truffle is found from September 15th to January 31st.

Wine Pairing

For black truffle tagliatelle, consider a Barbaresco like Produttori del Barbaresco Barbaresco. If you prefer white wine, try Cervaro della Sala or Teruzzi Vernaccia di San Gimignano Isola Bianca.

For white truffle tagliatelle, opt for Fontanafredda Gavi Comune di Gavi, Angelo Negro Roero Arneis Serra Lupini, or Borgo Alla Terra Vernaccia di San Gimignano.

Tips

Truffles are delicate tubers. Store them for a maximum of 7-8 daysin a glass jar wrapped in breathable gauze.
