Pea and Mint Soup

In the previous article, I shared the recipe for Oven-Baked Beer Potatoes. Today, I bring you the recipe for a delicious Creamy Pea and Mint Soup.

Peas are rich in vitamins, including vitamins A, B1, B6, C, and folic acid. Additionally, they help alleviate menopause symptoms thanks to phytoestrogens.

Ingredients

  • 400 g frozen peas
  • 2 yellow onions
  • 5 mint leaves
  • 205 ml water
  • Extra virgin olive oil (to taste)
  • Salt and pepper (to taste)

Preparation

  1. Wash the onions, place them on a cutting board, and chop them
  2. In a large saucepan, add a few tablespoons of extra virgin olive oil
  3. Add the chopped onions and sauté until they become translucent
  4. Add the frozen peas and cover with water
  5. When the mixture begins to boil, add the mint leaves tied with string
  6. Cook for about 18 minutes, then remove the mint leaves
  7. Use an immersion blender to blend until smooth and creamy
  8. Serve the creamy pea and mint soup in bowls. Garnish with a drizzle of olive oil and a mint leaf in each bowl
  9. Enjoy your meal!

Pair this dish with a Falanghina del Sannio DOC. This Campanian wine has a straw yellow color and intense aromas of ripe fruit, accompanied by jasmine notes. On the palate, the wine is fresh, balanced and savory.
