In the previous article, I shared the recipe for Oven-Baked Beer Potatoes. Today, I bring you the recipe for a delicious Creamy Pea and Mint Soup.
Peas are rich in vitamins, including vitamins A, B1, B6, C, and folic acid. Additionally, they help alleviate menopause symptoms thanks to phytoestrogens.

Ingredients
- 400 g frozen peas
- 2 yellow onions
- 5 mint leaves
- 205 ml water
- Extra virgin olive oil (to taste)
- Salt and pepper (to taste)
Preparation
- Wash the onions, place them on a cutting board, and chop them
- In a large saucepan, add a few tablespoons of extra virgin olive oil
- Add the chopped onions and sauté until they become translucent
- Add the frozen peas and cover with water
- When the mixture begins to boil, add the mint leaves tied with string
- Cook for about 18 minutes, then remove the mint leaves
- Use an immersion blender to blend until smooth and creamy
- Serve the creamy pea and mint soup in bowls. Garnish with a drizzle of olive oil and a mint leaf in each bowl
- Enjoy your meal!
