Today, I present to you the recipe for creamy chickpea soup.
Chickpeas are a legume rich in nutritional value. Additionally, they boast numerous health benefits, including:
- Aid in digestion: Chickpeas, being high in fiber, contribute to the elimination of substances present in food but unusable by the body
- Low glycemic index: Chickpeas have a low impact on blood sugar levels
- Help prevent hypertension and reduce the risk of heart diseases
- Combat damage caused by free radicals

Ingredients
- 400g pre-cooked chickpeas
- 350g vegetable broth
- 2 carrots
- 1 shallot
- 1 celery stalk
- 1 potato
- Bread croutons as needed
- Extra virgin olive oil as needed
- Fine salt as needed
- Black pepper as needed
Preparation
- Clean and slice the shallot, carrots, and celery
- Take a pot, prepare the vegetable broth, and bring it to a simmer
- Take a saucepan, add 2 tablespoons of olive oil
- Clean and dice the potato
- Add the sliced vegetables
- Cover with a lid and let it cook for a few minutes
- Drain the chickpeas thoroughly
- Add the pre-cooked chickpeas
- Mix everything well
- Add the hot vegetable broth
- Cook for about half an hour
- Use an immersion blender to blend until smooth and homogeneous
- Adjust salt and pepper to taste
- Prepare the croutons
- Serve the soup with some croutons and a drizzle of extra virgin olive oil
