Today, for the main course, I present to you the recipe for Roast Leg of Lamb with Baked Fennel.<\/p>\n\n\n\n<p><strong>Index<\/strong>:<\/p>\n\n\n\n<ul>\n<li><a href=\"#h-ingredients\">Ingredients<\/a><\/li>\n\n\n\n<li><a href=\"#h-roast-leg-of-lamb\">Preparation of Roast Leg of Lamb<\/a><\/li>\n\n\n\n<li><a href=\"#h-baked-fennel\">Preparation of Backed Fennel<\/a><\/li>\n\n\n\n<li><a href=\"#h-wine-pairing\">Wine Pairing<\/a><\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n\n\n\n<ul>\n<li>1 leg of lamb<\/li>\n\n\n\n<li>Extra Virgin Olive Oil (EVO): as needed<\/li>\n\n\n\n<li>Aromatic herbs (sage, rosemary, thyme, marjoram, bay leaves, garlic): as needed<\/li>\n\n\n\n<li>2 glasses of white wine<\/li>\n\n\n\n<li>2 glasses of water<\/li>\n\n\n\n<li>3 fennel bulbs<\/li>\n\n\n\n<li>70g breadcrumbs<\/li>\n\n\n\n<li>30g Grana Padano PDO<\/li>\n\n\n\n<li>2 tablespoons of EVOO<\/li>\n\n\n\n<li>Aromatic herbs (thyme, sage, oregano, parsley): as needed<\/li>\n\n\n\n<li>Salt, pepper: as needed<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation\">Preparation<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-roast-leg-of-lamb\">Roast Leg of Lamb<\/h3>\n\n\n\n<ol>\n<li>Take a baking tray and line it with parchment paper<\/li>\n\n\n\n<li>Place the leg of lamb on it and massage it with oil, salt, and pepper<\/li>\n\n\n\n<li>Add the aromatic herbs: sage, rosemary, thyme, marjoram, bay leaves, and 1 clove of garlic<\/li>\n\n\n\n<li>Preheat the oven to 180\u00b0C (356 \u00b0F)<\/li>\n\n\n\n<li>Pour 2 glasses of water and 2 glasses of wine over the leg of lamb<\/li>\n\n\n\n<li>Cover the tray with aluminum foil<\/li>\n\n\n\n<li>Bake at 160 \u00b0C (320 \u00b0F) for about 3 hours and 20 minutes<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1000\" height=\"998\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/02\/coscotto-agnello-finocchi-gratinati-01.webp\" alt=\"Leg of lamb and gratin fennel\" class=\"wp-image-48502\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-baked-fennel\">Baked Fennel<\/h3>\n\n\n\n<ol>\n<li>Clean the fennel bulbs and remove the outer parts<\/li>\n\n\n\n<li>Slice them thinly on a cutting board with a knife<\/li>\n\n\n\n<li>Rinse the fennel under running water and pat them dry with paper towels<\/li>\n\n\n\n<li>Take a bowl<\/li>\n\n\n\n<li>Add EVOO, breadcrumbs, Parmesan, and aromatic herbs<\/li>\n\n\n\n<li>Mix well<\/li>\n\n\n\n<li>Preheat the oven to 210 \u00b0C (410 \u00b0F)<\/li>\n\n\n\n<li>Take a baking tray and line it with parchment paper<\/li>\n\n\n\n<li>Arrange the fennel slices on the tray without overlapping<\/li>\n\n\n\n<li>Sprinkle the breadcrumb mixture over the fennel. If the coating is not even, add more breadcrumbs<\/li>\n\n\n\n<li>Bake the fennel in the oven at 200 \u00b0C (392 \u00b0F) for about 20 minutes<\/li>\n\n\n\n<li>Occasionally check the cooking to prevent the breadcrumbs from burning<\/li>\n\n\n\n<li>Once cooked, place the roast leg of lamb and the baked fennel on a serving dish<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-wine-pairing\">Wine Pairing<\/h2>\n\n\n\n<p>The recommended wine pairing is a <a href=\"https:\/\/www.xtrawine.com\/en\/wines\/red-friuli-venezia-giulia-colli-orientali-del-friuli-doc-refosco-dal-peduncolo-rosso\/195+32+575+459\" target=\"_blank\" rel=\"noreferrer noopener\">Refosco dal Peduncolo Rosso Colli Orientali del Friuli DOC<\/a>. This wine has an <strong>intense ruby \u200b\u200bred color<\/strong>. O<strong>n the nose<\/strong>, it presents <strong>aromas of blackberry<\/strong>, undergrowth, Morello cherry, violet, and the <strong>typical spicy note of cloves<\/strong>. <strong>On the palate<\/strong>, the wine is <strong>structured without being excessive<\/strong>.
