Today, I&#8217;m suggesting a dish packed with flavors: Red radicchio and Taleggio risotto.<\/p>\n\n\n\n<p>Among the various types of rice, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Carnaroli\" target=\"_blank\" rel=\"noreferrer noopener\">Carnaroli<\/a> is <strong>highly esteemed<\/strong>. Its <strong>long grains<\/strong>, high starch content, and excellent cooking resistance make it stand out. Additionally, Carnaroli rice contains a good amount of lysine, an essential amino acid.<\/p>\n\n\n\n<p><strong>Index<\/strong>:<\/p>\n\n\n\n<ul>\n<li><a href=\"#h-ingredients\">Ingredients<\/a><\/li>\n\n\n\n<li><a href=\"#h-preparation\">Preparation<\/a><\/li>\n\n\n\n<li><a href=\"#h-wine-pairing\">Wine Pairing<\/a><\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n\n\n\n<ul>\n<li>1 liter of vegetable broth<\/li>\n\n\n\n<li>\u00bd yellow onion<\/li>\n\n\n\n<li>1 Red radicchio<\/li>\n\n\n\n<li>300g Carnaroli rice<\/li>\n\n\n\n<li>100g Taleggio cheese<\/li>\n\n\n\n<li>Extra virgin olive oil: as needed<\/li>\n\n\n\n<li>Salt, pepper: as needed<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1000\" height=\"668\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/02\/risotto-radicchio-taleggio-02.webp\" alt=\"Risotto al radicchio e taleggio\" class=\"wp-image-48192\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation\">Preparation<\/h2>\n\n\n\n<ol>\n<li>Prepare the warm vegetable broth<\/li>\n\n\n\n<li>Clean and wash the radicchio<\/li>\n\n\n\n<li>On a cutting board, slice the red radicchio into thin strips<\/li>\n\n\n\n<li>Chop the onion<\/li>\n\n\n\n<li>In a pan, heat some olive oil<\/li>\n\n\n\n<li>Once the oil is hot, add the chopped onion<\/li>\n\n\n\n<li>After a moment, add the sliced radicchio<\/li>\n\n\n\n<li>Pour in a ladle of hot broth<\/li>\n\n\n\n<li>When the broth has evaporated, add the rice and let it toast<\/li>\n\n\n\n<li>Deglaze with wine<\/li>\n\n\n\n<li>Add a ladle of broth every time it&#8217;s absorbed<\/li>\n\n\n\n<li>On a cutting board, dice the Taleggio cheese<\/li>\n\n\n\n<li>When the rice is cooked, adjust the seasoning with salt and pepper, then add the Taleggio<\/li>\n\n\n\n<li>After a moment, serve the risotto<\/li>\n<\/ol>\n\n\n\n<p>If you like, you can add a sprinkle of grated Parmigiano Reggiano on each dish.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-wine-pairing\">Wine Pairing<\/h2>\n\n\n\n<p>Pair this dish with a <a href=\"https:\/\/www.xtrawine.com\/en\/wines\/white-piedmont-roero-docg\/196+256+553?c=2497\" target=\"_blank\" rel=\"noreferrer noopener\">Roero Arneis DOCG<\/a> from Piedmont. This wine has an <strong>intense straw yellow color<\/strong>. On the <strong>nose<\/strong>, it offers <strong>notes of yellow-fleshed fruit<\/strong> with a predominance of peach, along with <strong>hints of acacia flowers<\/strong> and tropical fruits.
