During alcoholic fermentation, the yeasts added to the must convert sugar into alcohol.<\/p>\n\n\n\n<p>After this process is finished, the wine is stored in containers that allow for varying degrees of oxygenation.<\/p>\n\n\n\n<p>The most commonly used containers are:<\/p>\n\n\n\n<ul>\n<li><strong>Wood<\/strong>: Depending on its origin &#8211; Europe, America &#8211; and degree of toasting, it will yield different results.<\/li>\n\n\n\n<li><strong>Concrete<\/strong>: Allows for temperature regulation during the maturation phase.<\/li>\n\n\n\n<li><strong>Terracotta<\/strong>: Terracotta amphorae, which can be buried or not.<\/li>\n<\/ul>\n\n\n\n<p><strong>Index<\/strong>:<\/p>\n\n\n\n<ul>\n<li><a href=\"#h-what-does-amphora-aging-mean\">What does &#8216;amphora aging&#8217; mean?<\/a><\/li>\n\n\n\n<li><a href=\"#h-what-are-the-advantages-of-amphora-aging\">What are the advantages of amphora aging?<\/a><\/li>\n\n\n\n<li><a href=\"#h-what-happens-if-the-amphorae-are-buried\">What happens if the amphorae are buried?<\/a><\/li>\n<\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-does-amphora-aging-mean\">What does &#8216;amphora aging&#8217; mean?<\/h2>\n\n\n\n<p>When you read that wine is aged in amphorae, it means that instead of using wooden barrels, steel tanks, or concrete, t<strong>he wine is matured in terracotta containers, namely amphorae<\/strong>.<\/p>\n\n\n\n<p><strong>Amphora aging is ancient<\/strong>. It was used in <a href=\"https:\/\/en.wikipedia.org\/wiki\/Georgia_(country)\" target=\"_blank\" rel=\"noreferrer noopener\">Georgia<\/a> as early as 6000 BC. This millennia-old technique has only been <strong>rediscovered<\/strong> in the <strong>last thirty years<\/strong>.<\/p>\n\n\n\n<p>Another country where this technique was used is <a href=\"https:\/\/en.wikipedia.org\/wiki\/Armenia\" target=\"_blank\" rel=\"noreferrer noopener\">Armenia<\/a>.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1000\" height=\"664\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/02\/affinamento-in-anfora-01.webp\" alt=\"amphora aging\" class=\"wp-image-48118\"\/><\/figure>\n\n\n\n<p>In Italy, it was the Etruscans who introduced this material, also for wine storage. In <a href=\"https:\/\/en.wikipedia.org\/wiki\/Magna_Graecia\" target=\"_blank\" rel=\"noreferrer noopener\">Magna Graecia<\/a>, amphora aging was already used.<\/p>\n\n\n\n<p>An Italian pioneer in the use of amphora aging is <a href=\"https:\/\/blog.xtrawine.com\/en\/vinification-in-amphora-the-qvevri-method\/\" target=\"_blank\" rel=\"noreferrer noopener\">Jo\u0161ko Gravner<\/a>, who rediscovered this technique in 2000.<\/p>\n\n\n\n<p>Gravner began to refine his wines in the Georgian style. The <a href=\"https:\/\/www.xtrawine.com\/collections\/gravner\" target=\"_blank\" rel=\"noreferrer noopener\">Gravner<\/a> company is on the border between Italy and Slovenia.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-are-the-advantages-of-amphora-aging\">What are the advantages of amphora aging?<\/h2>\n\n\n\n<p>Terracotta, as a material, <strong>does not impart aromas<\/strong>, as is the case with wood aging.<\/p>\n\n\n\n<div class=\"wp-block-media-text is-stacked-on-mobile\"><figure class=\"wp-block-media-text__media\"><img decoding=\"async\" width=\"675\" height=\"1024\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/02\/affinamento-in-anfora-03-675x1024.webp\" alt=\"amphora aging\" class=\"wp-image-48120 size-full\"\/><\/figure><div class=\"wp-block-media-text__content\">\n<p>Another positive aspect is that amphora aging allows for <strong>micro-oxygenation without altering the wine&#8217;s organoleptic characteristics<\/strong>.<\/p>\n\n\n\n<p>Furthermore, the use of amphorae<strong> allows for long macerations and less use of sulfur dioxide<\/strong>.<\/p>\n\n\n\n<p>For this reason, organic\/biodynamic producers use this material for aging.<\/p>\n\n\n\n<p>Some producers ferment in terracotta amphorae.<\/p>\n\n\n\n<p>In this case, the fermentation process and maceration on the skins occur naturally.<\/p>\n<\/div><\/div>\n\n\n\n<p><strong>Other advantages<\/strong> of using amphora aging include:<\/p>\n\n\n\n<ul>\n<li><strong>Amphorae do not need to be replaced after many uses<\/strong>.<\/li>\n\n\n\n<li><strong>Terracotta prevents<\/strong> the <strong>spread of microorganisms and bacteria<\/strong> that live on the skins and <strong>are harmful to the wine&#8217;s organoleptic profile<\/strong>.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-what-happens-if-the-amphorae-are-buried\">What happens if the amphorae are buried?<\/h2>\n\n\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\"><div class=\"wp-block-media-text__content\">\n<p>If terracotta amphorae are buried, the temperature remains constant.<\/p>\n\n\n\n<p>This happens because the earth is a natural insulator.
