Today, I bring you a Carnival recipe: the &#8220;Graffe.&#8221;<\/p>\n\n\n\n<p>Graffe is a traditional recipe from <a href=\"https:\/\/en.wikipedia.org\/wiki\/Campania\" target=\"_blank\" rel=\"noreferrer noopener\">Campania<\/a>, but it&#8217;s so famous that it&#8217;s prepared throughout Italy.<\/p>\n\n\n\n<p>A recipe worth trying on the most festive day of the year!<\/p>\n\n\n\n<p><strong>Index<\/strong>:<\/p>\n\n\n\n<ul>\n<li><a href=\"#h-ingredients\">Ingredients<\/a><\/li>\n\n\n\n<li><a href=\"#h-preparation\">Preparation<\/a><\/li>\n\n\n\n<li><a href=\"#h-wine-pairing\">Wine Pairing<\/a><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-ingredients\">Ingredients<\/h2>\n\n\n\n<ul>\n<li>350g boiled potatoes<\/li>\n\n\n\n<li>30g granulated sugar<\/li>\n\n\n\n<li>1 lemon: grated zest<\/li>\n\n\n\n<li>300g all-purpose flour<\/li>\n\n\n\n<li>60g Manitoba flour<\/li>\n\n\n\n<li>11g brewer&#8217;s yeast<\/li>\n\n\n\n<li>1 egg<\/li>\n\n\n\n<li>35g butter<\/li>\n\n\n\n<li>Sunflower seed oil for frying: as needed<\/li>\n\n\n\n<li>Granulated sugar for garnish: as needed<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1000\" height=\"735\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/01\/graffe-04.webp\" alt=\"Graffe\" class=\"wp-image-47945\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation\">Preparation<\/h2>\n\n\n\n<ol>\n<li>Boil the potatoes and mash them once they have cooled<\/li>\n\n\n\n<li>In a bowl, combine sugar and lemon zest, rubbing them together with your hands for a moment<\/li>\n\n\n\n<li>In another bowl, sift the flours, add mashed potatoes, sugar, lemon zest, and yeast. Knead until you get a smooth and homogeneous mixture<\/li>\n\n\n\n<li>Add the egg and continue kneading. Once the dough is well combined, add the soft butter and continue kneading until the butter is fully incorporated<\/li>\n\n\n\n<li>Transfer the dough onto a floured surface, as it may be a bit sticky. Knead it briefly with your hands for a few moments, then transfer it to a bowl<\/li>\n\n\n\n<li>Cover the dough with plastic wrap and let it rise until it doubles in size (approximately 2 hours)<\/li>\n\n\n\n<li>Turn the dough onto a floured surface and shape it into a loaf<\/li>\n\n\n\n<li>Divide the dough into small portions (about 60 grams each) and form balls, then create a hole in the center<\/li>\n\n\n\n<li>Cover the graffe with a cloth and let them rise for about 1 hour.<\/li>\n\n\n\n<li>In a large pot, pour sunflower seed oil and heat it to 170-180 \u00b0C<\/li>\n\n\n\n<li>Dip the graffe in the hot oil, turning them occasionally<\/li>\n\n\n\n<li>Once they are well golden, drain the graffe and let them dry on paper towels<\/li>\n\n\n\n<li>Roll the warm graffe in granulated sugar until coated<\/li>\n\n\n\n<li>Serve the graffe!<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-wine-pairing\">Wine Pairing<\/h2>\n\n\n\n<p>The recommended wine pairing is an <a href=\"https:\/\/www.xtrawine.com\/search?q=asti\" target=\"_blank\" rel=\"noreferrer noopener\">Asti Spumante DOCG<\/a>, known for its <strong>abundant and persistent perlage<\/strong> and a straw-yellow color. <strong>Aromatically<\/strong>, it is rich in <strong>fruity notes<\/strong> with hints of wisteria flowers, acacia, and honey.
