In that year, an early frost seemed to jeopardize the grape harvest, but the resolute farmers proceeded with vinification<\/p>\n\n\n\n<p>The result was remarkable: an excellent wine, aromatic, and as dense as passito. Low temperatures froze the water in the grapes, concentrating sugars, acids, and aromas.<\/p>\n\n\n\n<p>This gave birth to the term &#8220;eiswein,&#8221; or ice wine.<\/p>\n\n\n\n<p>The <strong>production technique<\/strong> was perfected <strong>in 1955<\/strong> by Hans Georg Ambrosi.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/01\/icewine-02-1024x576.webp\" alt=\"Glass of ice wine\" class=\"wp-image-47385\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-production-regions\">Production Regions<\/h2>\n\n\n\n<p>Beyond <strong>Germany<\/strong>, <strong>Austria and Ontario<\/strong>, ice wine is produced worldwide, including France, Slovenia, Croatia, Hungary, the Czech Republic, Slovakia, the United States, Australia, and New Zealand.<\/p>\n\n\n\n<p><strong>In Italy<\/strong>, they are <strong>quite rare<\/strong>, with a concentration in Piemonte (Val di Susa and Val Chisone) and Val d&#8217;Aosta (Morgex).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-varieties-of-grapes-used-for-the-ice-wine\">Varieties of Grapes Used for the Ice Wine<\/h2>\n\n\n\n<p>Grape varieties to produce the ice wine vary, but <strong>Riesling from the Rhine\u00a0region is commonly<\/strong> employed for its pronounced acidity and diverse range of aromas.<\/p>\n\n\n\n<p><strong>Other white grape varieties<\/strong> include:<\/p>\n\n\n\n<ul>\n<li>Vidal (a cross between Trebbiano and Seibel 4986)<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/chardonnay\" target=\"_blank\" rel=\"noreferrer noopener\">Chardonnay<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/chenin-blanc\" target=\"_blank\" rel=\"noreferrer noopener\">Chenin Blanc<\/a><\/li>\n\n\n\n<li>Ehrenfeelser (a cross between Riesling and Sylvaner)<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/traminer\" target=\"_blank\" rel=\"noreferrer noopener\">Gewurztraminer<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/kerner\" target=\"_blank\" rel=\"noreferrer noopener\">Kerner<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-blanc\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot Bianco<\/a><\/li>\n\n\n\n<li>Seyval Blanc<\/li>\n<\/ul>\n\n\n\n<p><strong>Red grape<\/strong> varieties used include:<\/p>\n\n\n\n<ul>\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/cabernet\" target=\"_blank\" rel=\"noreferrer noopener\">Cabernet Franc<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/cabernet\" target=\"_blank\" rel=\"noreferrer noopener\">Cabernet Sauvignon<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/merlot\" target=\"_blank\" rel=\"noreferrer noopener\">Merlot<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-noir\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot Nero<\/a><\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/syrah\" target=\"_blank\" rel=\"noreferrer noopener\">Syrah<\/a><\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-winemaking-process\">Winemaking Process<\/h2>\n\n\n\n<p><strong><a href=\"https:\/\/blog.xtrawine.com\/en\/what-are-the-different-harvest-periods-around-the-world\/\" target=\"_blank\" rel=\"noreferrer noopener\">Harvesting<\/a><\/strong> takes place in the <strong>early morning<\/strong> to prevent the grapes from thawing. Sometimes, harvesting occurs at night. The grapes are collected <strong>only in January<\/strong>.<\/p>\n\n\n\n<p>Following the harvest, <strong>the grapes undergo pressing<\/strong>, extracting a small portion of juice due to their firmness. The resulting juice is rich in sugars.<\/p>\n\n\n\n<p><strong>Fermentation follows the pressing<\/strong>, with careful monitoring due to the high sugar content (180-300 g\/l), which can slow down the process.<\/p>\n\n\n\n<p>The ice wine <strong>vinification<\/strong> typically occurs <strong>in steel tanks<\/strong>, although some producers incorporate a brief aging period in wood.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2024\/01\/icewine-04-1024x576.webp\" alt=\"Glass of ice wine\" class=\"wp-image-47387\"\/><\/figure>\n\n\n\n<p>To meet growing demand, some producers use artificial cryoextraction, freezing the grapes during pressing. The result is a pleasant wine, but it lacks the aromatic development found in naturally withered grapes.<\/p>\n\n\n\n<p>In some autumns, humidity may lead to Botrys cinerea attacks, contributing a &#8220;noble rot&#8221; effect similar to passito.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-organoleptic-characteristics\">Organoleptic Characteristics<\/h2>\n\n\n\n<p>The ice wine shows a <strong>golden or amber color<\/strong>. <strong>On the nose<\/strong>, one can perceive <strong>aromas of honey<\/strong>, <strong>cooked apples<\/strong>, <strong>very ripe exotic fruit<\/strong>, accompanied by sweet spicy notes and hints of preserves. <strong>On the palate<\/strong>, they are <strong>balanced<\/strong> with a <strong>pronounced savoriness<\/strong>.<\/p>\n<\/span>","protected":false},"excerpt":{"rendered":"<p>Ice wines, also known as &#8220;Vini di ghiaccio&#8221; in Italian, are a specific type of wine produced under certain climatic conditions.
