The tables turned in the 17th century, when the the winemakers began to produce white wines from black grapes and obtained the Vin gris.&nbsp;<\/p>\n\n\n\n<p>The result was a sparkling wine that is still bottled in March. In this period, in fact, the yeasts reactivate thanks to the rise in temperatures. Yeasts transform sugars into ethyl alcohol and carbon dioxide.&nbsp;<\/p>\n\n\n\n<p>The real innovation is owed to <strong>Dom Pierre P\u00e9rignon<\/strong>, a Benedictine monk <strong>of the Hautvillers Abbey<\/strong>, <strong>who obtained a clear wine<\/strong> by decanting the wine at the right time. Furthermore,<strong> choosing to bottle with the cork stopper, he managed to retain the foam<\/strong>.&nbsp;<\/p>\n\n\n\n<p>In less than a couple of centuries, the <strong>production of champagne increased <\/strong>from a few hundred thousand bottles in 1785 to almost <strong>30,000,000 million <\/strong>at the end of the <strong>19th century<\/strong>.&nbsp;&nbsp;<\/p>\n\n\n\n<p>The growth of production was followed by a commercial expansion, also supported by the technical innovation, such as:&nbsp;&nbsp;<\/p>\n\n\n\n<ul>\n<li>Fran\u00e7ois&#8217;s tool for measuring residual sugar&nbsp;<\/li>\n\n\n\n<li>the studies about the yeasts by Maumen\u00e9 and Pasteur&nbsp;<\/li>\n<\/ul>\n\n\n\n<p><strong>AOC Champagne was born in 1936.<\/strong> In <strong>2000 production exceeded 300,000,000 bottles.<\/strong>&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-which-grapes-are-used-nbsp\">Which Grapes Are Used&nbsp;<\/h2>\n\n\n\n<p>The varieties are:&nbsp;<\/p>\n\n\n\n<ul>\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-noir\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot noir<\/a>&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-meunier\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot Meunier<\/a>&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/chardonnay\" target=\"_blank\" rel=\"noreferrer noopener\">Chardonnay<\/a>&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>There are <strong>4 systems of education<\/strong>:&nbsp;<\/p>\n\n\n\n<ol start=\"1\">\n<li><strong>cordon de royat<\/strong>: a type of spurred cordon, used for Pinot Noir&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"2\">\n<li><strong><em>val\u00e9e de Marne<\/em><\/strong>: used for Pinot Meunier, in the area of the same name&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"3\">\n<li><strong>chablis<\/strong>: mainly used for Chardonnay&nbsp;<\/li>\n<\/ol>\n\n\n\n<ol start=\"4\">\n<li><strong>guyot<\/strong>: widely used, except for Grand crus and Premier crus&nbsp;<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2023\/11\/champagne-come-si-fa-02-1024x576.webp\" alt=\"Champagne vines\" class=\"wp-image-46756\"\/><\/figure>\n\n\n\n<p>There are also 2 other grapes in the specification:&nbsp;<\/p>\n\n\n\n<ul>\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/wines\" target=\"_blank\" rel=\"noreferrer noopener\">petit meslier<\/a>&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/search?q=arbanne\" target=\"_blank\" rel=\"noreferrer noopener\">arbanne<\/a>&nbsp;<\/li>\n<\/ul>\n\n\n\n<p>Some producers also use Pinot Gris, Pinot Blanc, Enfum\u00e9 and Pinot de juillet. Finally, there are endangered vines.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-champagne-is-made-nbsp\">How Champagne is Made&nbsp;<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-harvest-and-pressing-nbsp\"><strong>Harvest and pressing<\/strong>&nbsp;<\/h3>\n\n\n\n<p>Production begins with<strong> hand-harvesting <\/strong>and <strong>gentle<\/strong> <strong>pressing<\/strong>.&nbsp;Then, after pressing, the <strong>yield<\/strong> must not exceed <strong>2550 liters of juice for every 4000 kg of grapes<\/strong>. The <strong>first pressing is called cuv\u00e9e<\/strong>, while <strong>the second is called taille.<\/strong> From this second pressing, they obtain <strong>500 liters of juice<\/strong>. Finally, <strong>reb\u00eache<\/strong> is the name of the<strong> third pressing<\/strong>.&nbsp;<\/p>\n\n\n\n<p>First, the juice undergoes a clarification process, then is fermented. In order to do so, each maison decides whether to carry out malolactic fermentation. This is followed by the assembly of different base wines.&nbsp;<\/p>\n\n\n\n<p><strong>Liqueur de tirage<\/strong>&nbsp;<\/p>\n\n\n\n<p>Now, the producers add the <strong>liqueur de tirage<\/strong>, that is a mixture of sugar, yeasts and other substances.&nbsp;<\/p>\n\n\n\n<p>This is followed by bottling the obtaines mixture in champagne bottles and resting them horizontally in the chalk cellars at 10-12 \u00b0C for a couple of months.&nbsp;<\/p>\n\n\n\n<p>Resting <em>sur lattes<\/em>, the yeasts, once dead, recombine and create the wide aromatic range of Champagne.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-aging-on-lees-nbsp\"><strong>Aging on lees<\/strong>&nbsp;<\/h3>\n\n\n\n<p>The aging depends of the type of cuv\u00e9e:&nbsp;<\/p>\n\n\n\n<ul>\n<li><strong>standard cuv\u00e9e <\/strong>: 2-3 years&nbsp;<\/li>\n\n\n\n<li><strong>millesim\u00e9<\/strong>: 3-5 years&nbsp;<\/li>\n\n\n\n<li><strong>cuv\u00e9e de prestige<\/strong>: 5-10 years&nbsp;<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2023\/11\/champagne-come-si-fa-03-1024x576.webp\" alt=\"Champagne cellar\" class=\"wp-image-46759\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-degorgement-or-disgorgement-nbsp\"><strong>D\u00e9gorgement or disgorgement<\/strong>&nbsp;<\/h3>\n\n\n\n<p>After aging in the bottles, there is the d\u00e9gorgement or disgorgement, which means that in this phase the yeasts are eliminated. The neck of the bottle is immersed upside-down in a liquid at -25 -28 \u00b0C so that the frozen lees are forced out of the bottle by the wine\u2019s carbon dioxide pressure.&nbsp;<\/p>\n\n\n\n<p>To replenish that small quantity of wine, they add a little of the same base-wine or, as an alternative, the liqueur de dosage or d&#8217;exp\u00e9dition (i.e. a mixture of wine and cane sugar or grape sugar\/fructose).&nbsp;<\/p>\n\n\n\n<p>After the dosage, the bottle is capped with a cork and a metal cage.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-types-of-champagne-nbsp\">Types of champagne&nbsp;<\/h2>\n\n\n\n<p>There are various types of champagne based on:&nbsp;<\/p>\n\n\n\n<ul>\n<li>color&nbsp;&nbsp;<\/li>\n\n\n\n<li>grapes&nbsp;<\/li>\n\n\n\n<li>dosage&nbsp;<\/li>\n\n\n\n<li>price&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-color-nbsp\"><strong>Color<\/strong>&nbsp;<\/h3>\n\n\n\n<p>Usually, <strong>Champagne<\/strong> comes in a <strong>straw yellow <\/strong>shade, or a graceful golden tone.&nbsp;<\/p>\n\n\n\n<p>In order to produce the <strong>ros\u00e9 variety, <\/strong>they can:&nbsp;<\/p>\n\n\n\n<ul>\n<li>Start from white base-wines and then add a little red wine (<a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-meunier\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot Meunier<\/a> or Pinot Noir), or;&nbsp;<\/li>\n\n\n\n<li>Use <a href=\"https:\/\/www.xtrawine.com\/collections\/pinot-noir\" target=\"_blank\" rel=\"noreferrer noopener\">Pinot Noir<\/a>\/Pinot Meunier and let it <strong>macerate for a few hours<\/strong>. Champagne will result in a delicate pink shade, accompanied by aromas of melon and mandarin.<strong> A longer maceration<\/strong> gives an <strong>intense and lively pink <\/strong>as a result. This is <a href=\"https:\/\/www.xtrawine.com\/it\/prodotti?search=saign%C3%A9e\" target=\"_blank\" rel=\"noreferrer noopener\">Champagne Saign\u00e9e.<\/a>&nbsp;<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-suitable-grapes-nbsp\"><strong>Suitable grapes<\/strong>&nbsp;<\/h3>\n\n\n\n<ul>\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/champagne\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Blanc de Blancs<\/strong><\/a>: the base-wines come from white grapes.&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/champagne\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Blanc de noirs<\/strong><\/a>: the vinification takes place with Pinot Noir or Pinot Meunier, vinified alone or blended together with other black grapes.&nbsp;<\/li>\n\n\n\n<li><strong>Cuv\u00e9e<\/strong>: it is made mixing base-wines different by variety, territory and year.&nbsp;<\/li>\n\n\n\n<li><a href=\"https:\/\/www.xtrawine.com\/collections\/champagne\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Millesim\u00e9<\/strong><\/a>: these Champagnes are produced with grapes harvested in a specific harvest and a particular year.&nbsp;<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" width=\"1024\" height=\"576\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2023\/11\/champagne-come-si-fa-04-1024x576.webp\" alt=\"Champagne vintage\" class=\"wp-image-46765\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-dosage-nbsp\"><strong>Dosage<\/strong>&nbsp;<\/h3>\n\n\n\n<p>The dosage varies based on the amount of residual sugar, namely:&nbsp;<\/p>\n\n\n\n<ul>\n<li><strong>brut nature\/sans dosage\/pas dos\u00e9<\/strong>: the <strong>residual sugar is &lt; 3 g\/l<\/strong>. The result is a drier Champagne, with a sharp but not pungent acidity.
