In fact, in old farmsteads, they used to plant a tree in the center of the courtyard to provide shade on long, sunny summer days.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"445\" height=\"179\" src=\"https:\/\/blog.xtrawine.com\/wp-content\/uploads\/2023\/11\/zoccolaio-cantina-barolo-05.webp\" alt=\"Zoccolaio tree\" class=\"wp-image-46781\"\/><\/figure><\/div>\n\n\n<p>The tree is represented as in the <strong>Jewish and Indian iconography<\/strong> of the inverted tree: rooted in the sky (the spiritual dimension) and extending its branched on the ground, that is the known world. It is the <strong>tree of life or the tree of knowledge<\/strong>. The graphic of the labels traces back to this tradition that characterizes Lo Zoccolaio identity<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-barolo-ravera-riserva-2017\"><a href=\"https:\/\/www.xtrawine.com\/products\/lo-zoccolaio-barolo-ravera-riserva-2017\" target=\"_blank\" rel=\"noreferrer noopener\">Barolo Ravera Riserva 2017<\/a><\/h2>\n\n\n\n<p>Lo Zoccolaio winery follows the traditional process precisely. In the vineyard, grapes are treated with love and respect, which means that Lo Zoccolaio&#8217;s <strong>guidelines<\/strong> do <strong>not<\/strong> involve the <strong>use of herbicides<\/strong>. Furthermore, controlled ground cover is maintained between the rows through cover cropping, <strong>respecting the rhythms of nature<\/strong>.<\/p>\n\n\n\n<p><strong>Harvesting is strictly manual<\/strong>: only the best grapes, with lower yields but better quality, are selected.<\/p>\n\n\n\n<div class=\"wp-block-media-text has-media-on-the-right is-stacked-on-mobile\" style=\"grid-template-columns:auto 27%\"><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading\" id=\"h-winemaking\"><strong>Winemaking<\/strong><\/h3>\n\n\n\n<p>The grape harvest is followed by destemming and soft pressing, then <strong>fermentation in stainless steel tanks<\/strong> at a controlled temperature of <strong>28 \u00b0C<\/strong>.<\/p>\n\n\n\n<p>The must remains in contact with the skins for 18 days. After racking, the cellar conditions are created for a perfect malolactic fermentation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-aging\"><strong>Aging<\/strong><\/h3>\n\n\n\n<p>The wine ages <strong>in large Slavonian oak barrels<\/strong> (2,500 liters) for <strong>42 months<\/strong> and refines in bottles for 6 months before being sold.<\/p>\n\n\n\n<p><strong>All steps are taken with care<\/strong>, leaving nothing to chance. Everything is done <strong>in accordance with tradition<\/strong>, <strong>utilizing the most modern methodologies and tools<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-organoleptic-characteristics\"><strong>Organoleptic Characteristics<\/strong><\/h3>\n\n\n\n<p>Bright and crystalline <strong>ruby red color<\/strong>.<\/p>\n\n\n\n<p><strong>Intense<\/strong>, <strong>full<\/strong>, and <strong>persistent aroma<\/strong>: reminiscent of dried roses, alpine flowers, and noble wood.<\/p>\n\n\n\n<p><strong>Great structure<\/strong>, <strong>well-balanced thanks to mature tannins<\/strong>. Good acidity, accompanied by nuanced and persistent aromas. A wine for meditation.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-barbera-d-alba-superiore-sicule\"><a href=\"https:\/\/www.xtrawine.com\/products\/lo-zoccolaio-barbera-dalba-superiore-sucule-2020\" target=\"_blank\" rel=\"noreferrer noopener\">Barbera d&#8217;Alba Superiore Sicul\u00e9<\/a><\/h2>\n\n\n\n<p>The <strong>production area<\/strong> is in the <strong>municipalities<\/strong> of <strong>Barolo and Monforte<\/strong>. The vineyards have a <strong>South<\/strong>, <strong>Southeast<\/strong> exposure. Grapes are <strong>handpicked<\/strong> in 12-kilo crates.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-winemaking-0\"><strong>Winemaking<\/strong><\/h3>\n\n\n\n<p>Only <a href=\"https:\/\/www.xtrawine.com\/collections\/barbera\" target=\"_blank\" rel=\"noreferrer noopener\">Barbera<\/a> grapes are used to produce this wine. After harvest, fermentation begins with <strong>skin contact<\/strong> for <strong>10 days<\/strong> at a <strong>controlled temperature<\/strong>.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-aging-0\"><strong>Aging<\/strong><\/h3>\n\n\n\n<p><strong>18 months <\/strong>in <strong>small French oak<\/strong> barrels.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-organoleptic-characteristics-0\"><strong>Organoleptic Characteristics<\/strong><\/h3>\n\n\n\n<p>Intense and <strong>brilliant ruby red<\/strong>.<\/p>\n\n\n\n<p><strong>Intense varietal aromas of rose<\/strong>, <strong>ripe red fruits<\/strong>, and hints of vanilla.<\/p>\n\n\n\n<p><strong>Fresh and soft taste<\/strong>, of <strong>great balance<\/strong> and good freshness and persistence.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-pairings\"><strong>Pairings<\/strong><\/h3>\n\n\n\n<p>Ideal with <strong>fresh pasta with meat sauce<\/strong>, <strong>meat-filled ravioli<\/strong>, boiled meats, <strong>roast beef<\/strong>, and <strong>pork<\/strong>.<\/p>\n<\/div><\/div>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-langhe-baccanera\"><a href=\"https:\/\/www.xtrawine.com\/products\/lo-zoccolaio-langhe-baccanera-2020\" target=\"_blank\" rel=\"noreferrer noopener\">Langhe Baccanera<\/a><\/h2>\n\n\n\n<p>This wine is a <strong>blend of 4 types of grapes<\/strong> (<a href=\"https:\/\/www.xtrawine.com\/collections\/barbera\" target=\"_blank\" rel=\"noreferrer noopener\">Barbera<\/a>, <a href=\"https:\/\/www.xtrawine.com\/collections\/merlot\" target=\"_blank\" rel=\"noreferrer noopener\">Merlot<\/a>, <a href=\"https:\/\/www.xtrawine.com\/collections\/nebbiolo\" target=\"_blank\" rel=\"noreferrer noopener\">Nebbiolo<\/a>, <a href=\"https:\/\/www.xtrawine.com\/collections\/cabernet\" target=\"_blank\" rel=\"noreferrer noopener\">Cabernet Sauvignon<\/a>) from the estate&#8217;s vineyards located only in Barolo and Monforte d&#8217;Alba.<\/p>\n\n\n\n<p>Baccanera is a unique wine with the highest quality and longevity. This is thanks to both the <strong>long aging in barriques<\/strong> and this <strong>unique grape blend<\/strong>.
