We just aim to point you in the direction of some pairings that most agree are pretty good.<\/p><\/blockquote>\n\n\n\n<p><a href=\"https:\/\/blog.xtrawine.com\/en\/what-is-chinese-rice-wine-and-why-is-italian-wine-better\/\">That brings us to the subject of today\u2019s article \u2013 <strong>Chinese food<\/strong>.<\/a><\/p>\n\n\n\n<p>This is a type of food that flies somewhat under the radar when it comes to wine pairings. That\u2019s likely because <strong>wine hasn\u2019t typically been something that Chinese consumers tend to drink<\/strong>. As such, many haven\u2019t put much thought into the wines that pair with the <strong>succulent and spicy<\/strong> dishes that come out of the great nation.<\/p>\n\n\n\n<p>But the times are changing.<\/p>\n\n\n\n<p>There\u2019s an ever-growing wine industry in China as the country begins to indulge in more and more of this wonderful drink. So, what better way to commemorate than then to come up with a couple of wine pairings for some popular Chinese dishes?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Pairing #1 \u2013 Dim Sum and Prosecco<\/strong><\/h2>\n\n\n\n<p>These tasty dumplings have been a staple at Chinese restaurants for centuries. You take some prawns and chives, wrap it in a ball of dough and you have <strong><em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Dim_sum\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Dim Sum (si apre in una nuova scheda)\">Dim Sum<\/a><\/em><\/strong>.<\/p>\n\n\n\n<p>The dish itself provides an interesting combination of tastes. Biting into Dim Sum gives you the <strong>savoury flavour<\/strong> of the dough that\u2019s suddenly infused with the almost sweet taste of the shrimp as you get to the centre.<\/p>\n\n\n\n<p>The key here is that this isn\u2019t an overly-rich or complex dish. As such, a red wine is out of the question. It will just overpower the savoury and slightly sweet flavours that you\u2019re enjoying.<\/p>\n\n\n\n<p>A <strong>sparkling white wine<\/strong> is the perfect accompaniment to <em>Dim Sum<\/em>. And whenever we talk about sparkling whites, <strong><a rel=\"noreferrer noopener\" aria-label=\"Prosecco  (si apre in una nuova scheda)\" href=\"https:\/\/www.xtrawine.com\/en\/wines\/sparkling-conegliano-valdobbiadene-prosecco-docg\/218+624\" target=\"_blank\"><em>Prosecco <\/em><\/a><\/strong>can never be too far from the conversation.<\/p>\n\n\n\n<p>A <strong>dry Prosecco<\/strong>, in particular, complements this dish quite nicely.&nbsp;<\/p>\n\n\n\n<p>Think of Dim Sum as a morning dish and this pairing starts to make even more sense. It\u2019s a <strong>perfect aperitif<\/strong> for the main course.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>As a side note, <strong>sparkling white wines tend to go pretty well with fried dishes in general<\/strong>. And you\u2019ll find plenty of those in the Chinese diet, which makes Prosecco a near-ever-present when pairing Chinese food with wine.<\/p><\/blockquote>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pairing #2 \u2013 Chow Mein and Ros\u00e9<\/strong><\/h3>\n\n\n\n<p>Speaking of fried dishes, you have the classic <em><strong><a rel=\"noreferrer noopener\" aria-label=\"Chow Mein (si apre in una nuova scheda)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Chow_mein\" target=\"_blank\">Chow Mein<\/a><\/strong><\/em>. These are <strong>noddles <\/strong>that are stir fried, often with a host of vegetables and a meat of some description. <strong>Chicken <\/strong>is the most popular but it\u2019s not unknown to get pork or beef in a Chow Mein.<\/p>\n\n\n\n<p>That, coupled with the richness of the oil used for frying, means that you need something with a little more body to it than your typical sparkling white wine.<\/p>\n\n\n\n<p><strong><a href=\"https:\/\/www.xtrawine.com\/collections\/rose-wines\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"A Ros\u00e9 is the perfect compromise. (si apre in una nuova scheda)\">A Ros\u00e9 is the perfect compromise.<\/a><\/strong> These wines tend to have a touch more complexity that white wines without being as rich as red wines.<\/p>\n\n\n\n<p>They also tend to have a lot of <strong>fruity notes<\/strong>, which lends them that bit of acidity that allows them to cut through the richness of the Chow Mein.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pairing #3 \u2013 Peking Duck<\/strong><\/h3>\n\n\n\n<p><strong>Duck <\/strong>isn\u2019t a particular common item on a lot of Western menus, which means that a lot of people may struggle to find the right pairing for the meat.<\/p>\n\n\n\n<p>You may assume that a white wine is the way to go here. After all, duck is a type of <strong>poultry<\/strong>, which usually indicates that a white wine is the best choice.<\/p>\n\n\n\n<p>However, that\u2019s without taking the <strong>plum sauce<\/strong> that the duck gets covered in. This brings a richness to the dish that a white wine may not be able to cut through. Couple that with the <strong>surprising richness of the meat<\/strong> and you have a dish that calls for a red wine.<\/p>\n\n\n\n<p><em>So, which one to go for?<\/em><\/p>\n\n\n\n<p><strong><a rel=\"noreferrer noopener\" aria-label=\"Merlot  (si apre in una nuova scheda)\" href=\"https:\/\/www.xtrawine.com\/en\/wines\/red-merlot\/195+62\" target=\"_blank\">Merlot <\/a><\/strong>is often seen as a great pairing for Peking Duck, so any wine that uses those grapes is a good choice. There are several Italian wines that use this French grape, with the <strong><a rel=\"noreferrer noopener\" aria-label=\"Bolgheri Rosso DOC (si apre in una nuova scheda)\" href=\"https:\/\/www.xtrawine.com\/en\/wines\/bolgheri-doc-red\/535+195\" target=\"_blank\">Bolgheri Rosso DOC<\/a><\/strong> being our choice. With that, you get a rich mix of Merlot, <a href=\"https:\/\/blog.xtrawine.com\/en\/santa-barbara-animale-celeste-sauvignon-2018-review\/\">Sauvignon Blanc<\/a>, and Syrah, which is more than enough to match up to the richness of this classic Chinese dish.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Pairing #4 \u2013 Kung Pao Chicken<\/strong><\/h3>\n\n\n\n<p>Now, we\u2019re getting into the <strong>spiciness <\/strong>that a lot of Chinese dishes are known for. Here, the richness of the dish isn\u2019t the main issue that you\u2019re going to have to contend with.<\/p>\n\n\n\n<p>It\u2019s the spiciness that can cause some clashes with traditional red wines.<\/p>\n\n\n\n<p>This is where Italian white wines come into the picture. You\u2019re looking for something that has a <strong>high enough acidity to deal with the spice<\/strong>, as well as being capable of cleansing your palate ready for the next bite.<\/p>\n\n\n\n<p>There are plenty of options to choose from here, with off-whites generally being preferred.<\/p>\n\n\n\n<p>But if we\u2019re pressed to pick, we\u2019re going to end up making an interesting choice \u2013 the <strong><a href=\"https:\/\/www.xtrawine.com\/collections\/white-wines\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Cortaccia Brenntal Gewurztraminer Riserva 2016 (si apre in una nuova scheda)\">Cortaccia Brenntal Gewurztraminer Riserva 2016<\/a><\/strong>.<\/p>\n\n\n\n<p>The notes of peach and apple lend the wine the acidity it needs to compete with the spiciness of the dish. However, you cannot underestimate the importance of the <strong>mineral undertone<\/strong> that this wine offers.<\/p>\n\n\n\n<p>That gives the wine a grounding that can help to quell the spiciness of the dish.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Final Word<\/strong><\/h2>\n\n\n\n<p>Of course, we\u2019ve only looked at a small sample of classic Chinese dishes on this list. <strong>There are plenty more food and wine pairings that you may have to try and work out on your own.<\/strong><\/p>\n\n\n\n<p>As a general rule of thumb, <strong>sparkling white wines<\/strong>, such as Prosecco, work very well with the <strong>fried savoury<\/strong> and noodle dishes that are so prevalent in Chinese food.
