But we reckon <strong><a href=\"https:\/\/en.wikipedia.org\/wiki\/Spaghetti\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"spaghetti  (si apre in una nuova scheda)\">spaghetti <\/a><\/strong>might just pip it as the most beloved Italian dish out there.<\/p>\n\n\n\n<p>It\u2019s certainly a favourite among the xtraWine team. We\u2019re sure that doesn\u2019t come as a surprise as you can never go too far wrong with <strong>good pasta<\/strong>.<\/p>\n\n\n\n<p>However, we also like to experiment a little with our pasta on occasion. After all, as amazing as <strong>spaghetti and meatballs<\/strong> can be, it\u2019s like anything else in life.<\/p>\n\n\n\n<p>Too much of a good thing can get a <em>little boring<\/em>.<\/p>\n\n\n\n<p>So we\u2019ve gone in search of a twist to bring to our love for spaghetti. And in this article, we\u2019re going to share an unexpected new favourite along with a couple of wines that we think complement it really well.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Ingredients<\/strong><\/h2>\n\n\n\n<p>This one might get a little bit complicated as you\u2019re going to make your pasta from scratch. You could circumvent a good portion of this recipe by buying some spaghetti from the store.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>But where\u2019s the fun in that?<\/p><\/blockquote>\n\n\n\n<p>For the truly <em>home-made feel<\/em>, you\u2019ll want to make this one from start to finish. That means we have two ingredients lists for you:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>The Pasta Dough<\/em><\/h3>\n\n\n\n<ul><li>Four eggs<\/li><li>About two and a half cups of flour, though you may want to up this a little if needed<\/li><li>A teaspoon of olive oil, with a little extra put aside<\/li><li>Half a teaspoon of salt<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><em>The Pear Cheese Sauce<\/em><\/h3>\n\n\n\n<ul><li>About a pound of Cacio de Roma cheese, which you should grate<\/li><li>Three quarters of a cup of mascarpone<\/li><li>Six pears, which you should peel, core and grate<\/li><li>A little bit of ground pepper to add some seasoning<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Recipe<\/strong><\/h2>\n\n\n\n<p>Before we get going with this one, we will need to note one thing.<\/p>\n\n\n\n<p>You\u2019ll probably want a pasta machine handy if you\u2019re going to make your own spaghetti. Now you could do it by hand, of course. But it\u2019s a laborious process that takes a lot of time.<\/p>\n\n\n\n<p>The good news is that having a <strong>pasta machine <\/strong>makes this recipe super easy.<\/p>\n\n\n\n<p>Here are the steps you\u2019ve got to follow.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Step 1<\/em><\/h3>\n\n\n\n<p>Pop your flour and salt into a food processor. Get the motor running and slowly add your eggs and oil. Be careful here as pouring too fast could lead to your eggs flying all over the place.<\/p>\n\n\n\n<p>You should also add a tablespoon or two of water to the mix to give the dough some flexibility.<\/p>\n\n\n\n<p>Keep the motor running until your mixture turns into a dough.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Step 2<\/em><\/h3>\n\n\n\n<p>Take the dough out of the food processor and start kneading on a lightly floured surface. It should take about 10 minutes for you to get the dough how you need it.<\/p>\n\n\n\n<p>Add a little grease to a bowl and pop your dough inside. Cover it with plastic wrap and allow it to sit at room temperature for about an hour.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Step 3<\/em><\/h3>\n\n\n\n<p>You can make your sauce while you wait for the dough.<\/p>\n\n\n\n<p>This is a pretty simple process. Just pop all of your sauce ingredients into a bowl and stir. Keep going until everything mixes together.<\/p>\n\n\n\n<p>Now it\u2019s just a case of popping the mixture into a pan and heating it up until it melts. You might want to wait until you\u2019ve got the spaghetti ready before you do that though.<\/p>\n\n\n\n<p>For now, just cover the bowl and pop it in the fridge to keep it chilled.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Step 4<\/em><\/h3>\n\n\n\n<p>With the dough ready, it\u2019s time to put that pasta machine to good use.&nbsp;<\/p>\n\n\n\n<p>Flatten the dough into sheets that you can feed into the machine. Set it to the spaghetti setting and let it get to work. You\u2019ll probably have to make a few sheets as you have quite a lot of dough.&nbsp;<\/p>\n\n\n\n<p>You now have a bunch of spaghetti ready for cooking. You could dry it, but let\u2019s jump straight to the cooking!<\/p>\n\n\n\n<p>Bring a pan filled with water to the boil and pop your spaghetti inside. After about 10 minutes, your spaghetti should be ready to eat.<\/p>\n\n\n\n<p>While cooking the spaghetti, put your pear and cheese ingredients into another pan and melt them. Bring the sauce to the boil then leave the simmer while you wait for the pasta.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><em>Step 5<\/em><\/h3>\n\n\n\n<p>It\u2019s time to serve!<\/p>\n\n\n\n<p>Use spaghetti forks to serve up the pasta and just pour your sauce over the top. You\u2019re probably going to get a good few portions out of this, so it\u2019s great for a family meal.<\/p>\n\n\n\n<p>And of course, you\u2019ve only really got to follow steps 3 and 5 if you decide to buy your spaghetti from the store.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Wine Pairing<\/strong><\/h2>\n\n\n\n<p><em>So which wine goes well with this meal?<\/em><\/p>\n\n\n\n<p>It\u2019s a tough one as you have some<strong> interesting meshing of flavours<\/strong> going on here. The pear already offsets the cheese a little so you don\u2019t want an Italian wine that\u2019s too rich.<\/p>\n\n\n\n<p>We\u2019re going to play it safe here and say that <strong><a rel=\"noreferrer noopener\" aria-label=\"Sauvignon Blanc (si apre in una nuova scheda)\" href=\"https:\/\/www.xtrawine.com\/en\/wines\/white-sauvignon\/196+346\" target=\"_blank\">Sauvignon Blanc<\/a><\/strong> is probably the best choice here. It\u2019s sharp enough to have a kick to it without being so overpowering that it destroys the <strong>delicate flavours<\/strong> of this interesting little dish.<\/p>\n\n\n\n<p>Of course, you could experiment with a few other Italian white wines. Plus, <a href=\"https:\/\/www.xtrawine.com\/collections\/champagne\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"Champagne (si apre in una nuova scheda)\">Champagne<\/a> isn\u2019t a bad complement to this dish if you want to try something French.<\/p>\n\n\n\n<p>We will say that it\u2019s probably best to <strong>avoid red wines <\/strong>as a pairing though. They\u2019re just a little too complex for this dish and you\u2019ll end up losing the flavour of the pears and cheese if you\u2019re not careful.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>The Final Word<\/strong><\/h2>\n\n\n\n<p>And there you have it.<\/p>\n\n\n\n<p>Not every spaghetti dish needs to have meat involved.
